The study, Modeling of enzymatic transesterification for omega-3 fatty acids enrichment in fish oil by M. Ongis et al., details how enzyme-based transesterification enrich omega-3 fatty acids, specifically EPA and DHA. The study assesses a kinetic model for transesterification with varying enzyme load and ethanol concentration, which improves ω3 mass fraction in acylglycerols from 35% to 52%. The process was carried out in our flow reactor at a throughput of 1.5 L per hour, catalysed by an enzyme immobilised by ChiralVision BV, easily producing over 100 kg of product!
This paves the way for sustainable and efficient omega-3 enrichment processes.
